Mouth Watering Caramel Popcorn
250ml uncooked popcorn 1ml bicarbonate of soda
100g butter 2.5 ml vanilla essence
125ml brown sugar sea salt to taste
60ml golden syrup
Pop your popcorn as per package instructions. Add it all to a large roasting tin. Set aside. Pre-heat the oven to Grill.
Place the butter, sugar and syrup in a pot. Gently bring to a boil and cook over medium-low heat while continuously stirring for about 5 min.
Remove from the stove and add the Vanilla and bi-carbonate of soda. Stir ferociously till it foams then pour over the popcorn. Stir the popcorn well and coat as much as possible.
Place in the oven for 30-60 seconds at the time, KEEP A CLOSE EYE, it burns fast, then stir. Do this 5-7 times. This process allow the caramel to stick more to the popcorn and become harder. Remove from the oven and sprinkle with some sea salt. Let cool.
